Preparation steps

Rinse the arugula, shake dry and cut off any tough stems. Rinse the radicchio, cut off the stalk and cut into individual sheets. Peel around the oranges with a sharp knife, so that no white skin is visible, then separate out the fillets between the skins and squeeze the juice from the remaining fruit. Trim the radishes, rinse and slice into thin slices. Rinse the figs and cut into wedges.

Toast the nuts in a dry frying pan until fragrant, remove and chop coarsely. Arrange all salad ingredients decoratively on plates. For dressing, whisk together the two oils, the orange juice, lemon juice, some salt and agave syrup. Cut the passion fruit in half, remove the marrow, add to the dressing while stirring and season. To serve, drizzle the dressing over the salad and garnish as desired with chive stems.
