3 ozs Baby spinach
7 ozs watermelon pulp
3 ½ ozs Feta
1 Avocado
2 Tbsps balsamic vinegar
1 tsp honey

Preparation steps

Rinse steaks, pat dry and season with salt and pepper. Heat 2 tablespoons oil in a skillet and cook steaks on both sides for 6-8 minutes over medium heat until pink. Remove from pan and let stand, covered.

Meanwhile, clean, wash and slice radishes. Wash spinach and spin dry. Cut melon flesh into cubes, crumble feta. Cut avocado in half, pit, lift flesh from peel and cut into pieces.

For the dressing, whisk remaining oil with balsamic vinegar and honey and season with salt and pepper. Arrange spinach, radishes, melon cubes, avocado pieces and feta on plates. Slice steaks, place on top of salad and drizzle with dressing.
