500 grams Spinach
1 shallot
2 Tbsps Sour cream about 40 grams (approximately 1.5 ounces)
Nutmeg
1 heaping Tbsp butter about 20 grams (approximately 3/4 ounce)
1 Tbsp Pastry flour about 20 grams (approximately 3/4 ounce)
500 milliliters

1 pc Parmesan about 40 grams (approximately 1.5 ounces)

Preparation steps

1.

Add the wheat into the salted boiling water and cook according to package instructions. Drain.

Meanwhile, rinse the spinach and spin dry. Peel and finely dice the shallot.

Heat 1 tablespoon oil in a pan. Saute the shallot until soft. Add the spinach and cook over high heat about 5 minutes, allowing the liquid to evaporate.

Remove spinach from heat, stir in the sour cream and season with salt and freshly grated nutmeg.

Add the butter and flour into a pot. Pour in the milk and simmer while stirring over low heat about 10 minutes, until creamy. Season with salt, pepper and freshly grated nutmeg.

Drizzle a baking dish with the remaining oil. Add in half of the what, spinach, ham and sauce. Then add the other half of the ingredients, finishing with the sauce. Grate the parmesan on top and cook at 200°C (approximately 400°F) (fan oven 180 ° C; gas mark 3) until golden brown, about 30 minutes.
