- 2 kilograms white Asparagus
- salt
- 1 tsp butter
- 2 Tbsps lemon juice
- 1 pinch sugar
- For the hollandaise
- 250 grams butter
- 3 egg yolks
- 4 Tbsps dry white wine
- 1 Tbsp lemon juice

Preparation steps
1.
For the asparagus: Peel the asparagus and cut off the tough ends. Bring plenty of water, 1 teaspoon salt, butter, lemon juice and sugar to a boil and cook the white asparagus for about 25 minutes.
2.
For the hollandaise: Melt the butter and skim off foam. Put the yolks and wine in a metal bowl and beat over a hot water bath until creamy. Remove from the heat and very gradually stir in the butter, stirring constantly until you have a creamy sauce. Season with lemon juice, salt and pepper.
Serve the asparagus with the hollandaise, garnished with chives.
