- 7 ozs Spaghetti
- 4 Tbsps olive oil
- 2 red Bell pepper (seeds removed, chopped)
- 1 onion (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 1 ⅔ cups tomato passata
- 5 Tbsps tomato puree
- ⅜ cup water
- 2 tsps sugar
- ½ tsp Chili flakes (optional)
- 7 ozs cherry Tomatoes (halved)
- 3 ½ ozs baby Spinach
- salt
- freshly ground Black pepper
- 4 Cod (about 175g each)
- 2 Tbsps Pine nuts
- To garnish
- 1 Tbsp chopped Basil
Preparation steps
1.
Bring a large pan of salted water to a boil and cook the spaghetti until almost, but not quite tender
2.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a baking dish.

Heat 2 tablespoons oil in a frying pan and cook the peppers and onions for about 5 minutes, until softened. Add the garlic and cook for a further 2 minutes.

Stir in the tomato passata, tomato puree, water, sugar and chilli flakes, if using. Bring to a boil, then reduce the heat and simmer for 10 minutes, stirring occasionally.

Add the tomatoes, just cooked pasta and spinach, stir well and season to taste with salt and black pepper.

Put into the baking dish and place the cod fillets on top. Season to taste with salt and black pepper and drizzle with the remaining oil.
7.
Scatter the pine nuts over the top and bake for 15-20 minutes, until the fish is opaque and cooked through. Sprinkle with basil and serve immediately.
