3 sprigs thyme
1 onion
4 Tbsps Canola oil
1 tsp sweet ground paprika
2 tsps Tomato paste
½ tsp dried thyme
2 ozs Dark beer

Preparation steps

1.

Rinse the chicken, pat dry and season with salt and pepper inside and out. Rinse the parsley and the thyme and shake dry. Peel the onion and cut into quarters. Put the onion and the herbs into the abdominal cavity and close the cavity with a toothpick.

Mix the oil with the paprika, tomato paste and thyme. Brush the chicken with about half of the marinade and let stand for about 30 minutes.

Put the chicken on the spit, fasten on the grill and cook, constantly turning, about 1 hour. Occasionally brush the chicken with the marinade. Sprinkle with beer about 10 minutes before then end of cooking time.
