3 ½ ozs sheep cheese
3 ½ ozs Cottage cheese
2 sprigs thyme
3 Tbsps walnut kernels
2 Tbsps olive oil

Preparation steps

1.

Wash zucchini, cut off top and set aside; remove soft flesh with a spoon and chop finely. Crumble feta cheese into a bowl and add cottage cheese. Wash thyme, shake dry and pluck leaves. Chop walnuts into small pieces.

Heat 1 tablespoon oil in a frying pan. Sauté zucchini flesh and nuts in it for 5 minutes over medium heat. Season with salt, bell pepper and paprika powder. Add pan contents to the cheese mixture. Mix everything together, pour into zucchini and replace lid.

3.

Place the zucchini in a baking dish, drizzle the remaining oil over it and cook in a preheated oven at 200 °C / 400 °F for 30 minutes.
