Zucchini Stuffed with Ground Beef and Barley

- 80 grams Pearl barley
- salt
- 1 shallot
- 1 garlic clove
- olive oil
- 400 grams Ground beef
- 350 grams Cherry tomatoes
- 100 milliliters Beef broth
- freshly ground peppers
- 2 Tbsps coarsely chopped parsley
- 4 large Zucchini
- butter (for the pan)
- 100 grams freshly grated Cheese (such as Gruyère)
- Dill flower (for garnishing)
Preparation steps
Rinse barley through a sieve into a saucepan, cover with water, season with a pinch of salt and bring to a boil. Cook for about 45 minutes.
Peel and finely chop shallot and garlic. Heat oil in a pan and saute onion and garlic until translucent. Add ground beef and cook until crumbly. Rinse tomatoes, quarter and add to meat mixture. Add broth and season with salt and pepper. Add parsley and simmer on meduim heat for about 5 minutes. Add barley, mix well and remove from heat.
Rinse and pat dry zucchini, halve and scrape out seeds with a teaspoon. Place zucchini, cut side up, into a buttered baking dish. Stuff with beef and barley mixture and sprinkle with cheese. Bake in preheated oven at 180°C (approximately 350°F) for about 30 minutes.
Garnish with dill and serve.
