- 2 eggs
- 200 grams peeled ground almonds
- 200 grams sugar
- 2 drops Bitter almond oil
- 2 Tbsps powdered sugar (for dusting)
- dark Couverture (to decorate, if necessary)
Preparation steps

Separate the eggs. Beat the egg whites until stiff. Mix the remaining ingredients with egg yolk and fold into the egg whites. Spread the mixture thick on a lined baking tray. Place in the oven at 100°C (approximately 200°F) for about 2 to 2 ½ hours. Allow to dry.

Let cool and cut with a large knife into diamonds (about 9 x 5 cm) (approximately 3 1/2 inch x 2 inch). Dust with powdered sugar. Possibly decorate a diamond with chocolate into a musical clef.
