You can use the rice pudding with almond milk as a basic recipe and vary it: Instead of almond milk, it can be prepared just as well with oat, soy, or rice drink. You can replace the raspberries with other fruits of your choice. Chocolate can be replaced with nuts, seeds, or coconut flakes, for example. If the rice pudding with almond milk is sweet enough without rice syrup, you can simply omit it and thus save some sugar. Alternatives such as maple syrup or honey are also suitable.

- 22 ozs Almond milk
- 4 ¼ ozs Brown rice
- 1 tsp Vanilla
- 2 Tbsps Rice syrup
- ¾ oz vegan Dark chocolate (70% cocoa content)
- 7 ozs Raspberries
Preparation steps
Bring almond drink with whole grain rice pudding to a boil in a saucepan, stirring occasionally. Cover and simmer until done, about 30-35 minutes. Whisk in vanilla. Then leave open to cool, stirring occasionally, and sweeten with rice syrup.
At the same time, grate chocolate. Sort raspberries, wash and set aside 1 handful for garnish; mash the rest with a fork and mix into rice pudding. Divide rice pudding with almond milk among bowls and top with remaining raspberries and chocolate.
