1 Tbsp lemon juice
150 grams black Currants
225 grams Pastry flour
100 grams Whole wheat flour
75 grams ground almonds
1 packet Baking powder
200 grams butter
200 grams sugar
1 pinch salt
½ tsp ground cinnamon
4 eggs
100 milliliters milk

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F).

Peel, core, quarter and grate apples. Mix with lemon juice. Rinse currants and drain.

Combine both flours, nuts and baking powder. Beat butter and sugar and gradually add cinnamon and salt. Stir in eggs, one at a time, and add flour mixture, milk and apples. Form a smooth dough. Sprinkle currants with flour and add to batter. Grease a loaf pan with butter and dust with flour. Pour in batter and bake for 45-60 minutes. Remove, allow to cool, release on a cutting board and let cool completely. Slice and serve
