4 Tbsps Rum (optional)
3 ½ ozs sugar
8 Tbsps Cultured butter
4 eggs
3 ½ ozs Pastry flour
3 Tbsps
powdered sugar (optional)

Preparation steps

1.

Squeeze the lemon. Peel the apples, quarter, remove the cores and cut into thin slices. Mix the apples, lemon juice, almonds, raisins, 1 pinch of cinnamon, rum and 2 tablespoons of sugar. Grease a baking dish with 1 teaspoon of butter. Pour in the apple mixture.

Separate the eggs. Stir the remaining sugar with the remaining butter until foamy. Gradually stir in the egg yolks. Alternately stir in the flour and milk. Beat the egg whites until stiff and carefully fold into the egg yolk mixture.

Pour the egg mixture on the apple mixture, smooth and bake for 40 minutes at 350°F, until golden brown. Serve dusted with powdered sugar.
