- 2 Tbsps honey
- 7 ozs Yogurt
- ½ cup
- 2 slices day-old Whole Wheat Bread
- 2 small Apple
- 4 Walnut
- 2 Tbsps Canola oil
- 1 Tbsp powdered sugar

Preparation steps
Separate the eggs. Stir together the yolks, honey, yogurt, and milk in a bowl.
Coarsely chop the bread and mix with the yolk mixture. (If using fresh bread, add some flour to the batter.)
Place the egg whites in a tall vessel and beat until stiff with the whisks of a hand mixer, then fold into the egg-yolk mixture.
Rinse apples, wipe dry, quarter, core and dice. Coarsely chop the walnuts.
Heat the oil in a large non-stick pan over medium heat. Add apples and nuts and pour in the egg batter. Cover and cook until golden brown on the bottom, about 4 minutes.
Cut pancake into quarters in the pan, flip wedges and cook until the other sides of wedges are golden brown, about 2 minutes. Divide with 2 spatulas into pieces.
Divide the pancake pieces among plates, sprinkle with powdered sugar and serve.
