Why not spice up pancakes with apple?! That way there's quercetin in the apple. This secondary plant substance shines through its antioxidant effect: In our body, it binds harmful free radicals and thus protects our cells from damage.
It is worth studying the list of ingredients: vanilla ice cream often contains cheap, vegetable fats, colourings and flavours. This does not have to be the case. High-quality vanilla ice cream contains cream and natural vanilla flavour. Ice cream containing synthetic flavouring must be labelled as "vanilla-flavoured ice cream".

Ingredients
- For the pancakes
- 200 grams Pastry flour
- 1 pinch salt
- 4 Tbsps sugar
- milk
- 4 Tbsps eggs (medium size)
- 2 Apple (such as Cox Orange)
- 60 grams clarified butter (for frying)
- For the topping
- 1 Tbsp sugar
- 1 generous pinch cinnamon
- 1 pkg Vanilla ice cream (500 ml)
Preparation steps
For the pancakes: Combine flour, salt and sugar with milk and eggs. Mix well and let the batter swell for 30 minutes.
Rinse apples, remove core with an apple corer. Cut apples into thin slices.
Heat a pinch of butter in a small non-stick pan and pour in some apple slices. Pour a ladle of batter over the apple slices, let the batter run and bake until golden on both sides. In this manner, continue to make pancakes until batter is used. Keep pancakes warm in a preheated oven at 50°C (approximately 125°F).
Mix sugar with cinnamon. Lightly sprinkle over pancakes and serve with vanilla ice cream.
