1 oz Shelled peanut (2 TBSP.)
3 Tbsps natural peanut butter (without added sugar )
2 Tbsps coconut chips

Preparation steps

1.

Halve the lemon and squeeze the juice into a bowl with 9-ounces of water. Wash the apple, remove the core with an apple corer, cut the apple into 8 thick slices, and place in the lemon water for about 5 minutes.

Meanwhile, coarsely chop the peanuts and stir into the peanut butter. Pat apple slices dry with a kitchen towel and coat half of them with the peanut puree.

3.

Top each with 1 more apple slice and sprinkle the edges of the sandwiches with coconut shavings. Fix with toothpicks if desired and serve.
