1 cup White bean
28 ozs Pork cheek
2 Tbsps all-purpose flour
3 Tbsps olive oil
1 onion (diced)
2 ½ cups Meat stock
1 bay leaf
1 tsp peppercorns
1 tsp Juniper Berry
4 Tomatoes (skinned and diced)
1 red chili pepper (finely chopped)
1 ½ cups Green beans (chopped)
2 Tbsps fresh parsley
1 Tbsp lemon juice

Preparation steps

1.
Soften the beans in water overnight.
2.
Season the meat with salt and ground black pepper and dust with flour. Fry in hot oil in a crock pot until brown. Set aside and fry the onion until golden. Deglaze with the stock and bring to the boil.
3.
Place the bay leaf, peppercorns and juniper berries in a spice sack and add to the broth. Return the meat to the pot, cover and braise for around 2 hours.
4.
Drain the beans and add them to the meat after 1 hour of cooking time along with the tomatoes and chilli.
5.
Add the beans for the final 15 minutes of cooking time, remove the spices, stir in the parsley and season with lemon juice, salt and ground black pepper.
