2 Artichoke (each about 350 grams)
200 grams Sweet potato
salt
Basil (3 tablespoons finely chopped)
parsley (3 tablespoons finely chopped)
4 Tbsps Whipped cream
1 tsp Mustard
peppers (freshly ground)
lemon juice

Preparation steps

1.

Trim off artichoke stems and remove outer leaves. Trim leaf tips with scissors. Simmer artichokes in plenty of boiling water, about 40 minutes.

2.

Peel and cut potatoes into small pieces. Cook in salted boiling water until tender, about 20 minutes. Drain, rinse and drain again.

3.

Puree potatoes briefly with herbs, creme fraiche, mustard and 1 cup water. Season with salt, pepper and lemon juice.
