4 Tbsps olive oil

Preparation steps

1.

Rinse and spin dry arugula. Clean raspberries. Peel orange thoroughly and fillet. Squeeze juice from remaining pulp and whisk with vinegar and oil, season with salt and pepper to taste.

2.

Cut salmon into strips and form into small rolls. Drain mozzarella and cut into small pieces. Arrange arugula on plates and top with salmon, raspberries, orange fillets and mozzarella. Drizzle with the dressing and place remaining dressing into a small bowl. Serve.
