500 grams white Asparagus
120 grams peas
Sea salt
½ lemon
1 pinch sugar
peppers
4 Tbsps olive oil
1 tsp medium hot Mustard
350 grams Crabmeat (Ready to eat, cooked)
½ bunch Chervil
2 stalks Tarragon

Preparation steps

1.

Rinse asparagus, peel and cut off hard ends.

2.

Blanch peas in boiling salted water for about 3 minutes, drain, rinse in cold water and place in a bowl.

Rinse half a lemon in hot water, pat dry, zest finely, squeeze juice. Add with 1 pinch of sugar, oil and mustard to the peas and mix well. Season with salt and pepper. Add crab.

4.

Cook asparagus in boiling salted water until al dente, about 15 minutes.

5.

Meanwhile rinse chervil and tarragon, shake dry and pluck in coarse pieces.

6.

Lift asparagus from the water, drain and cut lengthwise into thin strips.

7.

Serve asparagus on 4 plates, garnish with herbs and top with crab mixture. Serve the asparagus crab salad lukewarm.
