- 3 ½ lbs green Asparagus
- Sea salt
- 1 Tbsp sugar
- 4 Tbsps balsamic vinegar
- 4 Tbsps grapeseed oil
- 1 tsp honey
- 2 ozs Parmesan
- 4 lemons
Preparation steps

Peel the bottom third of the asparagus and place in boiling water with 1 tablespoon sugar. Simmer for about 10 minutes, it should still be slightly firm.

For the dressing, whisk the balsamic vinegar with the oil, honey, and salt. Drain the asparagus, rinse briefly and arrange on a plate.
To serve: While it is still lukewarm, drizzle with the dressing. Garnish with freshly sliced Parmesan. Cut the lemon in half and serve with the salad.
