- 2 kilograms green Asparagus
- 1 tsp salt
- 1 tsp butter
- 1 pinch sugar
- 200 grams butter
- 4 Tbsps sliced hazelnuts
- salt
- White pepper
- 4 Tbsps fresh Parmesan
Preparation steps
1.
Peel the bottom third of the asparagus and cut off the ends.
2.
Bring a pot of water to a boil with the salt, butter and sugar and cook the asparagus for about 10 minutes.
3.
Melt the butter over medium heat, bring to a boil and skim off the white foam with a spoon. Sauté the hazelnut flakes in the melted butter and season with salt and pepper.
Pour the butter over the asparagus and serve showered with the Parmesan cheese and on preheated plates.
