28 ozs Asparagus
salt
1 lemon
4 stalks Tarragon
1 Tbsp butter
5 ozs Whipped cream
5 ozs milk
white peppers

Preparation steps

1.

Peel lower thirds of asparagus, cut off woody ends and boil in salted water for 8 minutes. Drain, rinse in cold water and drain again. 

2.

Rinse lemon in hot water, grate zest, and squeeze the juice. Rinse tarragon, shake dry, pluck off leave,s and chop.

3.

Heat butter in a pot. Add lemon zest and saute for 2-3 minutes. Add tarragon and saute for 1 minute on low heat.

4.

Add cream and milk and simmer on low heat for 1-2 minutes, stirring. Season with salt and pepper.

5.

Strain sauce through a fine sieve and pour into 4 tall glasses. Add asparagus and serve.
