1 cup Cranberry juice (100% juice)
¼ cup Maple syrup
2 tsps lemon juice
1 tsp ground cinnamon
1 tsp Vanilla
¾ cup Cranberry
¼ cup Brazil nut (chopped)

Preparation steps

1.
Preheat oven to 350 degrees F.
2.
Wash and dry apples. Cut top off of the apple. Core apple to within 1/2-inch from the bottom of the apple. Scoop cut center of the apple; chop finely and set aside.
3.
Place apples in 8x8 baking dish.
4.
Combine reserved apple pieces, and all remaining ingredients. Stir well to incorporate. Fill the center of each apple evenly with the cranberry mixture.
5.
Bake uncovered for 50 to 60 minutes or until apples are soft and tender. Baste with pan juices several times while baking.
6.
Serve warm. Drizzle apples with pan juices, if desired.
