- 2 Tbsps olive oil
- 1 onion (finely chopped)
- 1 small, red Bell pepper (seeds removed)
- 16 ozs ground Beef
- 2 Tbsps chopped, mixed Fresh herbs (parsley, thyme, rosemary)
- 2 Tbsps breadcrumbs
- 1 unwaxed lemon (finely grated zest)
- salt
- peppers
- 1 egg (beaten)
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Heat the oil in a pan and add the onion and pepper. cook gently for 5-7 minutes until softened. Set aside to cool.

Put the minced beef in a bowl and stir in the onions and pepper.
3.
Add the herbs, breadcrumbs, lemon zest and egg and mix well until blended. Season to taste with salt and pepper.
4.
Roll between your hands into 16-20 small balls.
5.
Put into a baking tin or small roasting tin and cook in the oven for about 20 minutes until brown and cooked through.
