28 ozs Pumpkin (such as Hokkaido or butternut)
3 Red chili peppers
2 ozs ginger
2 cloves garlic cloves
1 Orange
salt
freshly ground peppers
1 Tbsp Maple syrup
4 Tbsps olive oil
1 Cinnamon stick

Preparation steps

Preheat the oven to 200°C / 400°F.

Cut the pumpkin flesh into wedges and place in a baking dish. Rinse the the chili peppers and cut in half lengthwise. Cut the unpeeled ginger into thin slices. Press the garlic through a garlic press. Rinse the orange under hot water, pat dry and zest the peel finely. Squeeze out the juice. Spread the orange zest and juice, garlic, ginger and chilli over the pumpkin. Season with salt and pepper, then drizzle maple syrup and oil over it and add cinnamon. Stir together, then bake in the oven for about 35 minutes.
