¼ tsp fennel seeds
300 grams Salmon
salt

1 Tbsp olive oil
3 Tbsps butter
1 bunch Chives
200 grams Filo dough

Preparation steps

1.

Crush the fennel seeds in a mortar. Cut the fish fillet into 24 equal cubes and season with fennel, salt, and pepper.

2.

Heat the oil and 1 tablespoon butter in a pan. Briefly fry the fish cubes in portions, then remove immediately and let cool.

3.

Blanch the chives in boiling water, remove, drop into cold water and pat dry.

4.

Preheat the oven to 200°C (approximately 375°F) and line a baking sheet with parchment paper. Melt the remaining butter.

5.

Cut 24 squares from the filo pastry and brush with the melted butter.

6.

Place a fish cube in the center of each square. Pull the pastry up and over the fish pieces and tie with 1 blanched chive.

7.

Set on the baking sheet and bake for 30 minutes. Serve hot or cold.
