This dish is great for strength. The nests provide two and a half times the daily requirement of vitamin A and more than half of the daily required amount of iron.
If you prefer leaf spinach from the freezer (you will need about 700g), you only need to defrost it. After defrosting, squeeze it out very thoroughly, just like the fresh spinach, so that the nests hold together well.

- 1 garlic clove
- 1 onion
- 2 ⅕ lbs Spinach
- 2 Tbsps Canola oil
- Nutmeg
- salt

- 4 eggs

Preparation steps
Peel the garlic and onion and chop very finely.
Trim spinach, rinse thoroughly and drain in a sieve.
Heat the canola oil in a pot and sauté onion and garlic over medium heat until translucent.
Add spinach to pot while dripping wet and cook until wilted while stirring. Grate in a little nutmeg and season with salt and pepper.
Place spinach in a bowl and let cool slightly.
Divide spinach into 4 portions. With your hands, shape mixture into 4 balls, squeezing them over a bowl to remove excess moisture. Line a baking sheet with parchment paper.
Place spinach balls on the baking sheet. Flatten slightly, then form a well in the center of each.
Open eggs individually in a small bowl and slide an egg into each well.
Bake spinach nests in a preheated oven at 200°C / 400°F on the second shelf from the bottom for 15-20 minutes. Season with salt and pepper and serve.
