- 250 grams white, dried Beans
- 1 onion
- 2 Tomatoes
- 2 carrots
- 150 grams green Green beans
- 2 Tbsps vegetable oil
- 900 milliliters Vegetable broth
- salt
- freshly ground peppers
- 1 tsp freshly chopped cilantro
- 2 organic Limes
- 1 ripe Avocado
Preparation steps
Soak beans in cold water overnight.
Peel and finely chop onion. Blanch, rinse, peel, and quarter tomatoes. Cut tomatoes into pieces. Peel and thinly slice carrots. Rinse and halve green beans.
In a saucepan, heat the oil. Add onions and cook until translucent. Add white beans (drained well), along with broth. Simmer over medium heat, about 1 hour. After 30 minutes, add remaining vegetables. Season with salt, pepper and cilantro. Continue cooking until beans are tender.
Rinse limes with hot water. Squeeze the juice from one lime and cut the other lime into slices. Halve avocado and remove pit. Scoop out flesh and cut into thin slices. Drizzle avocado slices with a little lime juice. Season soup to taste with remaining lime juice. Ladle soup into warmed bowls and garnish with avocado and lime slices. If desired, serve with toasted ciabatta slices.
