1 Tbsp garlic cloves (minced)
2 carrots (thinly sliced)
53 ozs ground Beef
¼ cup Chili powder
1 Tbsp ground Cumin
3 Tbsps fresh oregano
1 Tbsp red peppers (crushed)
2 cups Tomato sauce
1 cup Beef broth
3 Tbsps Cider vinegar
2 ½ cups canned Kidney beans (rinsed and drained)
2 green Bell pepper (chopped)
shredded Cheese for garnish (optional)

Preparation steps

In a large pot or Dutch oven, cook the onions in oil, over medium heat, stirring occasionally, until soft and translucent. Add the garlic and the carrots, and cook the mixture, occasionally stirring, for 1 minute.

Add the beef and continue cooking over medium heat, stirring and breaking up any lumps, for 10 minutes, or until nicely browned. Add the chili powder, cumin, paprika, oregano, crushed red pepper and cook the mixture, stirring, for 1 to 2 minutes. Add the tomato sauce, broth, and vinegar, bring the mixture to a boil, and simmer, covered, stirring occasionally, for 45 minutes to 1 hour, or until the meat is tender.

Add the kidney beans, bell peppers, and salt and black pepper to taste and simmer the mixture, uncovered, for 15 minutes, or until the bell peppers are tender. Serve in bowls. Garnish with shredded cheese, if desired.
