3 onions
2 garlic cloves
vegetable oil (for frying)
1 Tbsp Tomato paste
200 Dark beer
200 grams potatoes
1 Tbsp ground paprika
1 tsp Caraway
600 milliliters Beef broth
100 grams Chanterelle
2 Tbsps butter
8 slices Bacon
1 tsp Lemon peel
1 Tbsp freshly chopped parsley

Preparation steps

Rinse beef and pat dry. Cut into cubes. Peel the onions and garlic and finely dice both. Brown the meat in portions in hot oil and take out of the pot. With the drippings, add 1 tablespoon oil, onions and garlic. Briefly cook and stir in the tomato paste and deglaze with the beer. Peel the potatoes, dice and add to the pot, along with paprika, caraway seeds and beef. Pour broth so that the beef is barely covered. Cover pot and simmer 2.5 hours. Stir occasionally and add remaining broth as needed.

Meanwhile, rinse chanterelles and cut in half. Cook in 1 tablespoon melted butter. Cut the bacon and fry in the remaining butter. Drain on paper towels. Place chanterelles, lemon zest and parsley in bowls. Top with beef stew and season with salt and pepper. Serve with bacon on top.
