2 Tbsps Sherry vinegar
2 Tbsps Maple syrup
2 Tbsps grapeseed oil

Preparation steps

1.

Peel oranges. Using a sharp knife, cut out sections from between the skin. Squeeze remaining pulp and collect juice. Cut watermelon into bite-sized pieces and remove seeds. Rinse celery and cut into thin slices. Rinse tarragon, shake dry and chop leaves.

Whisk together orange juice, sherry vinegar, maple syrup, grapeseed oil, salt and pepper. Stir in oranges, watermelon and celery. Allow to stand for about 30 minutes. Season to taste and stir in tarragon prior to serving.
