2 Chicken breasts (each about 120 grams)
100 milliliters Chicken broth
4 handfuls Leaf lettuce variety
1 Fennel
1 red onion
4 Blood orange
5 Tbsps olive oil
4 Tbsps lemon juice
salt
1 pinch sugar
peppers (from the mill)

Preparation steps

1.

Rinse chicken breast fillets under cold running water and pat dry with paper towels. Bring chicken stock to a boil in a pot and add chicken. Simmer at low heat, covered, about 15-20 minutes. Drain chicken, let cool and tear into small pieces.

Rinse salad greens and spin dry. Rinse fennel, halve, remove stalk and cut into thin strips. Peel onion, halve and cut into strips. Peel blood oranges thoroughly and cut into thin slices.

Mix salad greens, chicken, onion and fennel in a bowl. Arrange orange slices on a plate and distribute salad on top. Mix together olive oil, lemon juice, 2-3 tablespoons water, 1 pinch sugar and salt and pepper to taste. Sprinkle dressing over salad and serve.
