3 Chicken legs
500 milliliters Chicken broth
450 milliliters milk
salt
125 milliliters vegetable oil
500 grams Pastry flour
1 onion
3 garlic cloves
3 Tbsps olive oil
freshly ground peppers
2 Tbsps minced cilantro
3 eggs
4 Tbsps Whipped cream
80 grams breadcrumbs

Preparation steps

1.

Combine chicken drumsticks with chicken broth, bring to a boil. Reduce temperature and simmer, covered,  for about 35 minutes or until meat is tender. Remove drumsticks from the pan and cool. Separate meat from the bones.

Measure 450 ml (approximately 2 cups) of broth and bring to a boil again. Add milk, 1 tablespoon  of salt and oil to broth and mix well. Add flour all at once and whisk well. Cook, stirring, until mixture leaves the sides of the pan. Remove from heat and let cool.

Peel and chop onion and garlic. Heat olive oil in a pan and saute onion and garlic until translucent, stirring. Add meat and saute together briefly, season with salt and pepper. Add cilantro and cool.

Separate little pieces of dough and place about 1 teaspoon of filling in the middle. Wrap dough all around the filling. Make all croquettes in the same manner. Whisk eggs with cream and dip croquettes in the mixture. Roll in breadcrumbs. Heat oil in a pan and cook croquettes until golden brown on all sides. Drain on paper towels and serve.
