- 4 slices day-old white bread
- 400 grams Cherry tomatoes
- 2 Red onions
- 3 handfuls Basil
- 1 garlic clove
- 4 Tbsps olive oil
- 1 Tbsp lemon juice
- 2 Tbsps white balsamic vinegar
- salt
- peppers
- 1 pinch sugar
Preparation steps

Toast white bread in preheated oven at 220°C (approximately 425°F) for about 5 minutes or until crisp. Remove from the oven and cool slightly.

Rinse and dry tomatoes, halve or quarter, as desired. Peel and halve onions, cut into thin rings. Rinse basil, shake dry and set 8 small stalks aside for garnishing. Chop the rest coarsely. Peel garlic and squeeze into olive oil. Add lemon juice and balsamic vinegar, season with salt, pepper and sugar.

Dice bread and mix with tomatoes, onion and basil, toss with dressing. Garnish with remaining basil and serve.
