- 500 grams Cherry tomatoes
- 250 grams Ciabatta
- 7 Tbsps olive oil
- Sea salt
- freshly ground peppers
- 150 grams Spinach
- 8 slices Bacon
- 4 eggs
- 4 Tbsps balsamic vinegar
- 1 tsp liquid honey
Preparation steps
Preheat the oven to 200°C (approximately 400ºF).
Rinse and drain the tomatoes and place on a small baking sheet. Cut the bread into cubes and distribute on a small baking dish. Drizzle both with some oil and shower the tomatoes with sea salt and pepper. Bake together for about 20 minutes, until the tomatoes are soft and the bread is crusty.
Meanwhile, rinse the spinach, shake dry and tear into smaller pieces.
Fry the bacon in some oil until crispy and drain on paper towels.
Cook the eggs for about 5 minutes until soft. Rinse cold, peel carefully and cut into quaters.
For the dressing, combine 4 tablespoons of olive oil with the balsamic vinegar and honey. Mix well and season with salt and pepper.
Arrange the bread cubes on plates along with the tomatoes and the spinach. Distribute the bacon and eggs on top and serve drizzled with the dressing.
