5 cups Brussels sprouts (washed and trimmed)
salt (to taste)
2 Tbsps olive oil
2 shallots (peeled)
1 ½ cups Bacon (diced)
1 Tbsp Juniper Berry
1 cup cream
freshly ground Black pepper (to taste)

Preparation steps

Cut the Brussels sprouts in half. Bring a pan of salted water to a boil; add the Brussels sprouts and cook for about 10 to 12 minutes. Drain in a colander and set aside.

Heat the olive oil in a skillet and saute the onions and bacon for about 3 minutes. Add the Brussels sprouts and saute briefly, about 3 to 5 minutes.

Bruise the juniper berries in a mortar or pulse once or twice in a food processor. Add the berries and the cream to the Brussels sprouts. Let simmer for about 2 minutes. Season with salt and pepper to taste. Transfer to a serving bowl and serve.
