250 milliliters unsweetened Sour cherry juice
1 scallion
4 sprigs mint
4 sprigs parsley
2 Tomatoes
1 small red Hungarian wax pepper
1 large Cucumber
2 Tbsps vegetable oil
1 tsp honey
1 tsp lemon juice

Preparation steps

Pour the bulgur in a bowl with the cherry juice and let soak covered for about 45 minutes.

Meanwhile trim scallion, rinse and chop. Rinse the mint and parsley, shake dry and finely chop the leaves. Rinse the tomatoes, cut out the core, quarter and scrape out the seeds. Cut the flesh into small cubes. Rinse, trim and chop the pepper small. Rinse the cucumber, cut in half lengthwise, scrape out seeds and dice finely. Combine the oil with the honey and lemon juice, season with salt and pepper, whisk and combine with the remaining salad ingredients. let soak at least 30 minutes, season to taste again and serve.
