1 Ciabatta ( about 300 grams)
6 Tbsps olive oil
1 handful Baby spinach
250 grams Salmon
1 Tbsp lemon juice
salt
peppers (freshly ground)
1 small red onion
2 Tbsps Caper (from a jar)

Preparation steps

1.

Cut ciabatta into 5 cm (approximately 2 inches) squares. Heat 3-4 tablespoons  of oil in a pan, cook bread until golden brown and crispy on all sides. Drain on paper towels. Rinse spinach, shake dry and coarsely chop the leaves.

Rinse salmon, pat dry and drizzle with lemon juice. Season with salt and pepper. Heat oil in a pan and cook salmon on medium heat for about 5 minutes or until cooked through. Remove and let cool. Separate salmon with a fork into small pieces. Peel onion, cut into quarters and thinly slice.

3.

Top each bread square with a piece of lettuce, some salmon, some onion strips, and capers. Serve.
