200 grams ground almonds
100 grams powdered sugar
150 grams softened butter
3 Tbsps finely grated Orange peel
1 egg
200 grams Pastry flour
1 Tbsp lemon juice
150 grams candied ginger (finely chopped)
1 egg yolk (beaten)

Preparation steps

1.

Beat the butter, orange zest and egg until light and creamy. Stir in the ground almonds, powdered sugar, flour and lemon juice and mix until smooth.

Shape the dough into 2 rolls about 4 cm (approximately 1 1/2 inches) in diameter. Wrap each roll in plastic wrap and refrigerate for about 3 hours.

Cut the rolls into 4 mm (approximately 1/8 inch) thick slices and place on a baking sheet lined with parchment paper. Brush the cookies with the beaten egg yolk and sprinkle with candied ginger. Bake in an oven preheated to 180°C (approximately 350°F) for 12-15 minutes, until golden brown. Remove from the oven and cool on a wire rack.
