40 grams candied ginger (finely chopped)
10 grams candied ginger (cut into thin strips)
150 grams softened butter
1 egg yolk
100 grams sugar
250 grams Pastry flour

Preparation steps

1.

Beat the butter and sugar until light and fluffy. Add the egg yolk and mix well. Stir in the flour and chopped ginger and mix until a smooth dough is formed. Shape the dough into a ball, wrap with plastic wrap and refrigerate for about 1 hour.

Roll the dough out onto a floured surface to about 4 mm (approximately 1/8 inch) thick. Cut into star shapes using a cookie cutter.

Place the stars on a baking sheet lined with parchment paper and sprinkle with the candied ginger strips. 

4.

Bake in an oven preheated to 200°C (approximately 400°F) for 20 minutes, until light golden brown. Remove from the oven and cool on a wire rack.
