1 ½ cups all-purpose flour (plus extra for sprinkling)
1 unwaxed Orange (finely grated zest)
½ cup butter
¼ cup sugar
1 Tbsp finely chopped candied orange

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 baking trays with non-stick baking paper.
2.
Put the flour and orange zest into a mixing bowl and work in the butter.
3.
Add the sugar and candied peel and mix with your hands to form a stiff dough.
4.
Roll out the dough on a lightly floured surface to about 5mm|1/4" thickness and cut into rounds with a cookie cutter.
5.
Place on the baking trays and bake for 8-10 minutes until pale golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
