Preparation steps

Boil the sugar with 1 liter (approximately 1 quart) of water and simmer for about 5 minutes until the sugar has dissolved. Then let cool to lukewarm.

Rinse the oranges in hot water, pat dry and cut into 3-4 mm / 1/6 inch thin slices. Lay on a perforated plate or colander and into a flat shape or a sheet. Cover with the syrup and let rest about 12 hours. Pour off the syrup, boil the syrup again, and let cool slightly. Pour on the oranges again and leave for another 12 hours. Then take the oranges from the syrup and allow to drain on a rack. Allow to dry for 1-2 days.

Chop the chocolate and melt over a hot water bath. Remove from the heat, immerse the orange slices about halfway and place on parchment paper to dry.
