3 ¼ ozs butter
1 tsp Vanilla powder
16 ½ ozs Whole Grain Spelt Flour
3 tsps Baking powder

1 Hand mixer, 1 Grater

Preparation steps

Beat eggs with 1 pinch of salt and 80 g powdered sugar in a bowl with the whisks of a hand mixer until foamy.

2.

Rinse orange hot, rub dry and finely grate peel. Mix butter, vanilla powder and orange zest until smooth and fold in the egg mixture. Mix flour with baking powder, sift in and knead into a dough. Cover and chill for 1 hour.

3.

Line a baking tray with baking paper. Shape dough in portions with damp hands into approx. 65 small balls (Ø 1.5 cm), roll in remaining powdered sugar, place on baking sheet and flatten slightly.

4.

Bake in a preheated oven at 180 °C (convection oven 160 °C; gas: level 2-3) for 12-15 minutes. Remove and allow to cool.
