- ¼ cup sunflower oil
- 2 Tbsps unsalted butter
- 1 ½ cups carrots (peeled and sliced)
- 5 cups vegetable stock
- 1 Orange (juiced, half zested to garnish)
- ¼ cup double cream
- salt
- peppers
Preparation steps
1.
Heat the butter and sunflower oil in a large heavy-based saucepan over a medium heat.

Saute the carrots for 4-5 minutes until they start to soften. Increase the heat and deglaze the saucepan with the orange juice for 1 minute.

Cover with the stock, bring to the boil and reduce to a simmer for 10 minutes. Remove from the heat and puree with a stick blender until smooth.
4.
Add the double cream, blend again and season to taste.
5.
Serve with the orange zest as a garnish.
