14 ozs small Cauliflower
2 ½ ozs Emmentaler cheese
2 ½ ozs Parmesan
3 eggs
1 Tbsp ground psyllium husks (powder)
1 tsp dried oregano
salt
peppers
2 ozs soft goat cheese
1 oz young Spinach
1 red onion
1 Tbsp walnut kernels
4 ozs Tomato sauce

Preparation steps

1.

Clean cauliflower, wash and grate finely with a grater. Grate cheese as well. Thoroughly mix eggs with cheese, psyllium husks, oregano, salt, and pepper, and let swell for about 10 minutes. Then mix with the cauliflower.

Spread cauliflower mixture on a baking sheet covered with baking paper to form 2 or 4 thin patties and pre-bake in a preheated oven at 200 °C / 400 °F for about 10-15 minutes.

Meanwhile, cut goat cheese into thin slices. Clean spinach, wash, shake dry. Peel onion and cut into fine slices. Coarsely chop nuts.

Remove pizza patties from the oven and spread with the strained tomatoes. Top with onion rings and goat cheese, season with salt and pepper. Bake in the oven for another 15 minutes until golden brown. Remove from oven, if there are 2 patties, cut them in half and sprinkle with spinach leaves.
