400 grams shrimp (ready to cook, peeled and deveined)

4 Tomatoes
1 Red onion
1 green Bell pepper
1 Avocado
1 Lime (juiced)
1 Tbsp freshly chopped cilantro
brown sugar
cayenne pepper
2 Tbsps olive oil
cilantro (for garnishing)

Preparation steps

Rinse shrimp and cook in salted water for about 1 minute or until done. Rinse in cold water and drain well, cut into pieces. Rinse and quarter tomatoes, remove seeds and cut into small pieces. Peel onion and cut into small cubes. Rinse and halve bell pepper, remove seeds and ribs and cut into small cubes. Halve avocado, pit and cut pulp into small cubes. Mix lime juice with chopped cilantro, some sugar and cayenne pepper, toss with all prepared ingredients. Refrigerate for about 20 minutes.

Before serving, drizzle with oil.

Place ceviche onto china spoons and serve garnished with cilantro leaves.
