- For the rolls
- ½ cup all-purpose flour
- ½ cup Whole wheat flour
- 1 tsp Baking powder
- 0.111 cup soft butter
- ⅜ cup Yogurt
- all-purpose flour (for the work surface)
- milk
- 4 Tbsps Cheese (e. g. Gouda, grated)
- For the topping
- 4 Tbsps Quark
- 4 Tbsps Sour cream
- 1 tsp Horseradish
- lemon juice
- 8 slices smoked Salmon
- Dill (to garnish)
Preparation steps

Heat the oven to 200° (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.

Mix together both flours and the baking powder with a pinch of sugar and salt. Add the butter and yoghurt and quickly knead into a smooth dough. If necessary add a little more flour so the dough is not to sticky. Do not knead too long.

Split the dough into 4 equal pieces, roll into balls and roll out on a floured work surface approx. 2-3 cm thick. Place on the prepared baking tray, brush with a little milk and sprinkle with the cheese. Bake for 15-20 minutes until golden. Remove from the tray and leave to cool on a wire rack.

To make the topping, mix the quark with the sour cream and season with salt, horseradish and lemon juice.

Cut the rolls in half, spread with the quark mixture, top with the salmon, drizzle with some lemon juice and garnish with dill. Place the other half of the roll on top and serve.
