150 grams white bread
3 garlic cloves
80 grams butter
100 grams freshly grated Parmesan
500 grams Spaghettini
salt
white peppers (freshly ground)
to taste Fresh herbs (for garnishing)

Preparation steps

1.

Break white bread into small pieces. Peel garlic and cut 1clove into thin slices. 

2.

Heat 2 tablespoons of butter in a pan. Cook croutons until golden brown on all sides, squeeze remaining garlic cloves into the pan and drain croutons on paper towels.

Heat butter in another pan and saute garlic slices until light brown. Add Parmesan and mix well.

Cook spaghettini in plenty of boiling salted water according to package instructions until al dente. Drain well (set aside 80-100 ml of cooking water (approximately 1/3-2/5 cup)).  Add spaghettini to garlic and cheese, add cooking liquid and toss well. Season with salt and pepper and sprinkle with garlic croutons. If desired, serve garnished with herbs.
