- 4 Oranges
- 2 scallions
- 4 Chicken breasts (each about 500 g)
- salt
- freshly ground pepper
- 1 Tbsp brown sugar
- 1 Tbsp butter
- 1 Tbsp vegetable oil
- 2 tsps Dijon mustard
- 125 milliliters Chicken broth
- 40 grams chopped Pistachio
Preparation steps

Peel and slice 2 of the oranges. Squeeze the juice from the remaining oranges. Rinse and finely chop the scallions. Season the chicken with salt and pepper to taste.

Heat a dry nonstick skillet on the stove. Add the orange slices and sear on both sides until golden. Sprinkle with the sugar and add the butter. Keep warm until ready to serve.

Heat the oil in a skillet. Add the chicken and sear until golden on both sides. Pour in the broth, cover and simmer for 12-15 minutes. Remove the chicken and keep warm until ready to serve.
Stir the orange juice and mustard into the broth mixture. Simmer until reduced, and season with salt and pepper to taste.

Slice the chicken and serve on plates with the oranges and sauce. Garnish with the pistachios.
