100 milliliters Vegetable broth
1 carrot
1 Apple
thyme
1 tsp thyme
2 Tbsps honey
Oranges (juiced)
1 generous pinch ground ginger

Preparation steps

1.

Grease a small ovenproof dish with butter.

2.

Rinse apples, cut into quarters, remove core and cut into wedges.

3.

Peel carrot and cut into 5 cm (approximately 2 inch) long pins.

4.

Mix carrot, apple and thyme in the dish, mix and place chicken breasts on top.

5.

Mix orange juice in a bowl with honey and season with salt and thyme leaves. Coat chicken with half of honey mixture. Add vegetable stock to the pan and bake in a preheated 160°C (approximately 350°F) oven for about 30 minutes. Baste chicken occasionally with roasting juices.

6.

Remove from the oven and season with salt, pepper and ginger powder. Serve chicken breast on a bed of apple and carrot. Serve with remaining sauce.
